Tomatoes are among the most widely grown and consumed fruit in the world. Tomatoes are an excellent source of vitamin C as well.
A medium-sized tomato contains around 26 percent of the recommended daily value of vitamin C. In addition, tomatoes are enriched with lycopene, another antioxidant that reduces inflammation. Lycopene can easily be absorbed by the body when cooked, so eat canned or cooked tomatoes for an additional boost.
